Normans Bin C183 Coonawarra Cabernet Sauvignon 2022

Deep dense crimson red. Lifted aromatics with ripe varietal blackcurrant and mulberry fruits blended skillfully with cedary oak.

Medium bodied palate offering up dark plum and blackberry with typical minty character which are so true to region. The tannins are smooth and dusty while some dried earth and leather character shows upon allowing the wine to open up.

Winemaking

Fruit was sourced from premium vineyards in the northern reaches of the Coonawarra region. The fruit was picked in the cool of night at optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit acidity and flavour that Coonawarra wines are famous for. Following fermentation, pressing, clarification and final blending the fruit was matured with select parcels having contact with matured oak.

Cellaring

This wine will be drinking beautifully upon release but will develop well in the bottle with cellaring medium term.

Dark brick red with ruby hue. Dark ripe fruit flavours with cassis, spice and toasty vanilla oak notes. A silky smooth wine with nicely structured texture, dark berry fruit flavours and spice with fine lingering tannins. Good length and moreish finish.

Winemaking

The fruit was crushed and pressed gently before being fermented in stainless steel tanks. The wine had 12 months in older 3-4 year old barrels.

Cellaring

Drink now or cellar mid term.

Normans Bin C469 Limestone Coast Pinot Grigio 2022

This Pinot Grigio is a dry medium bodied wine exhibiting lemon-lime, pear and stone fruit aromas. The scent of almond and honeysuckle compliment the melon and green apple flavours which dominate with a hint of citrus fruit. This wine is an ideal accompaniment to summery dishes like salads, chicken and seafood, or simply sharing with friends.

Winemaking

Select parcels of fruit were sourced from vineyards in the Limestone Coast region of South Australia. The fruit was machine picked during the cool early hours of the morning this enabled us to select only the best fruit from the vineyards from this wonderful vintage. The fruit was then rapidly transported to the winery and immediately crushed, chilled and pressed, where the free run juice and pressings were separated. The juice is cold settled for 3-4 days, racked off solids and then fermented in stainless steel tanks. Post fermentation individual batches are blended to style then the finished parcels are carefully assessed, with only the finest chosen for the final blend prior to bottling.

Cellaring

Drink beautifully now or can be cellared for 1-3 years.

Normans Bin C287 Barossa Valley Chardonnay 2023

Medium straw in colour. Fruit driven style with lovely stone fruit ripe intensity with some underlying freshly cut grass aromas. Complex aromas.

Chardonnay fruit from selected Langhorne Creek vineyards were used in this blend and it gives the wine length and structure. The palate is fresh and vibrant with flavours of melon and pineapple and a long finish.

Winemaking

Fruit from selected vineyards in Limestone Coast were used in this wine. The fruit was crushed and pressed gently before being fermented in stainless steel tanks. The wine had minimal oak contact and lees stirring to create a rounder more voluptuous mouth feel.

Cellaring

A young and fresh wine that can be enjoyed now or cellar over the short term.

Normans Bin C207 Clare Valley Riesling 2018

Pale straw with green hue. Lifted floral blossom, lemon, lime and mineral notes with some white peach characters. This is a textbook Clare Valley Riesling. 

Intense, fresh, crisp and dry; delicate palate of zesty lemon and lime provide a mouth watering opening while crisp natural acidity and grape sugar provides the perfect combination.

Winemaking

Selected parcels of fruit were sourced from vineyards in the Clare Valley region of South Australia. The fruit was machine picked during the cool early hours of the morning which enabled us to select only the best fruit from the vineyards from this wonderful vintage. The fruit was then rapidly transported to the winery and immediately crushed, chilled and pressed, where the free run juice and pressings were separated. The juice is cold settled for 3-4 days, racked off solids and then fermented in stainless steel tanks. Post fermentation individual batches were blended to style then the finished parcels were carefully assessed, with only the finest chosen for the final blend prior to bottling.

Cellaring

Drinking beautifully now, but will cellar well for 3 or so years for those who like Riesling with a little age to develop more oily characters.

This wine has a fragrant nose displaying lifted aromas of cherries and spice with some savoury notes. Wonderfully balanced pure palate, which is light with subtle texture of cherry supported by well-integrated fine tannins leading to a long elegant finish with hints of spice. An easy drinking styled Pinot Noir.

Normans Bin C163 Limestone Coast Shiraz 2022

Rich crimson red with hints of plum purple. Lifted aromatics with spicy nose with earthy tones. The fruit flavours are blackcurrants and stewed plums.

Classic Limestone Shiraz with ripe fruit characters of dark plum and cherry, with a hint of cassis spice and oak. The palate is generous, vibrant and savoury, with a smooth and velvety mouthfeel with some dried earth character followed by a soft tannin structure.

Winemaking

Sourced from a premium vineyard located in the ancient limestone soils of the Limestone coast region of South Australia. The fruit was picked over a four-week period, which ensures blending options for more complex finished wine. The individual parcels were fermented in stainless steel open top fermenters, macerated on skins for seven days before being pressed then aged with a mixture of French and American oak. The wines were allowed to spontaneously undergo malolactic fermentation and were kept in individual batches until final blending to ensure only the finest wine of the vintage produced our bin series Shiraz.

Cellaring

A young and fresh wine that can be enjoyed now or cellar 1-3 years.
