2011 Cabernet Sauvignon
Dark purple with cherry red hues.
Fresh cherries, raspberry and chocolate with hints of tomato leaf and oak.
Fresh fruits of cherries, plums, blueberries and raspberries which all work in synergy with more complex flavours of cinnamon and a very well rounded velvet like tannin structure.
Select parcels of fruit were sourced from the southern soils of McLaren Vale for this wine. We picked the fruit at optimum ripeness in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours, which have made me fall in love with the McLaren Vale region and in particular it’s Cabernet Sauvignon’s. The wine was transferred to the winery where it was hand nurtured with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed the traditional techniques more often used in French winemaking. The wine was aged in French and American oak then select barrels were chosen for the final blend prior to bottling.
A wonderfully approachable wine upon release that will cellar well over the medium term.
