2015 Bin C183 Cabernet Sauvignon
Deep dense crimson red.
Black cherries, plums and mulberry with just a hint of spice and a kiss of oak.
Youthful style with black cherries, plum and mulberry notes. There is underlying spice and oak evident along with chocolate and coffee. The velvety tannins work well with some natural fruit acid to give a beautiful finish with some good length.
Fruit was sourced from premium vineyards in the northern reaches of the Coonawarra region. The fruit was picked in the cool of night at optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit acidity and flavour that Coonawarra wines are famous for. Following fermentation, pressing, clarification and final blending the fruit was matured with select parcels having contact with matured oak.
This wine will be drinking beautifully upon release but will develop well in the bottle with cellaring over the next few years.
