2014 Cabernet Sauvignon
Intense inky red/blue with beautiful magenta hues.
Chocolate, mint and blackcurrant with hints of cedar.
Soft, round and voluptuous with mouth filling blackcurrant, mint, plum and velvety tannin back bone which is supported by great persistence from highly concentrated fruit and a touch of oak.
Sourced from two vineyards with vines ageing from 34-65 years of age located in the north and south of McLaren Vale. The wine was fermented in small open top fermenters. A small parcel underwent fermentation in barrel to add another layer of oak complexity whilst working harmoniously with the fruit flavour profile. To complete the maturation process the wine went into seasoned American and French hogshead barrels with a small percentage of new oak for a period of 14 months. This enabled the oak to slowly infiltrate the highly concentrated fruit flavour creating a well-balanced yet complex tannin structure.
This wine will be drinking beautifully upon release but will develop well in the bottle over the next 5-10 years.
