2010 Cabernet Sauvignon

Crimson with purple hues.
Bouquet
Dark plum, blueberries with nutmeg spice.
Palate
Soft palate with blackberry and forest floor flavours. Integrated, subtle oak adds complexity and gives the wine a long finish.
Winemaking
The grapes were sourced from vineyards in the southern reaches of South Australia. The individual parcels were selected and harvested in March 2010 then fermented separately to ensure that each parcel articulated the unique character of each vine. All ferments were left on skins for a minimum of 7 days. During the subsequent eighteen-month oak maturation period in French and American new and old oak each individual batch of barrels was racked and returned periodically, to seamlessly integrate the tannins into the wine and to ensure that minimal filtration and no fining was required prior to bottling.
