2011 Sauvignon Blanc
Colour
Very pale straw with light green tinge.
Bouquet
Fresh lime, orange and passion fruit aromas.
Palate
Zesty, tropical fruit flavours with light and elegant varietal characters. Excellent fruit acid balance that finishes with an appealing crisp finish.
Winemaking
Harvested at the cool of night when the fruit flavour was at an optimum. We crushed the fruit quickly to separate the clear juice from the skins. A specific yeast for Sauvignon Blanc was used and after a cool fermentation the wine was carefully filtered and bottled to retain all the appealing fruit flavours.
Cellaring
Make to drink upon release while the fruit flavour is at its most fresh and vibrant but will reward short term cellaring.
