2009 Shiraz

Colour

Dark red centre with bright red brick edges.

Bouquet

The bouquet is a symphony of aromas with ripe blackberries, plums, mocha and tasted oak. There is an underlying hint of leather and earthy characters.

Palate

A complex palate which is both intense and sumptuous. Sweet berry flavours, dark chocolate, mocha and layers of toasted oak. The round tannins are perfectly structured to carry the rich characters of this wine all the way through to a long and elegant finish.

Winemaking

The fruit was sourced from two ancient vineyards in the North West of the Barossa from the sub regions of Greenock and Seppeltsfield. The wine was fermented in stainless steel static fermenters and pumped over twice per day. Wine was then pressed and transferred to New American Oak. It was then racked post MLF, and returned to barrel. The Wine was topped regularly with one racking 6 months later. The total maturation in oak was for 15 months. The wine was bottles with minimal fining or filtration.

Cellaring

Drinking now, but will reward 6-8 years cellaring to develop more complexity and smoothness.
