Palate
Zesty tropical fruit flavours with light and elegant varietal characters. Excellent fruit acid balance that .finishes with an appealing crisp and refreshing finish
Winemaking
Harvested in the cool of the night before the extreme heat wave occurred late in ripening season. The fruit was crushed quickly to separate the clear juice from the skins. Specific yeast for Sauvignon Blanc was used, following a cool fermentation and careful filtering and bottling to retain all the beautiful tropical fruit flavours.
Cellaring
Made to drink upon release while the fruit is at its most fresh and vibrant.
