Normans Estate Est 1853 Vine Ancestry Shiraz 2021
Well-balanced elegant nose with soft freshly cut plum, blackberry and blueberry notes showing its youthfulness at this stage. This is complimented with star anise spice giving depth to the highly aromatic bouquet. Full and vibrant with an initial surge of juicy fruit flavours of blackberry, plum and mulberry.
The oak and tannins are smooth and subtle with the under lying taste whilst some spice and natural fruit acid give length and definition. An outstanding match with all full flavoured red meat dishes. I find it goes well with the over powering delicious flavour of barbequed spare ribs!
Winemaking
Sourced from multiple sites in South Australia from vines aged from 35 - 80 years of age. The wine was fermented in small stainless steel fermenters to retain concentrated fruit flavours. To complete the fermentation process and maturation the wine went into mostly old oak barrels with a small percentage of new oak for a period of 12 months. This enabled the use of the finely toasted oak barrels to slowly infiltrate the highly concentrated fruit flavour creating a well-balanced yet complex tannin structure.

Normans Heritage Series Adelaide Hills Chardonnay 2016
This Chardonnay has pale yellow in colour with subtle notes of lemon curd and complement delicate aromatics of grapefruit and nectarine.
A fresh and elegant wine with pure fruit flavours of nectarine enhanced by crisp citrus acidity and a long, dry finish.
Winemaking
Selected parcels of fruit were sourced from the iconic cool climate region of the Adelaide Hills for this limited edition wine. The fruit was hand picked during the cool early hours of the morning. The fruit was then rapidly transported to the winery and immediately crushed, chilled and pressed. It was then allowed to settle before being racked off of juice lees, warmed and inoculated with selected dried wine yeasts. Fermentation occurred in stainless steel tanks of various sizes at 12-18 degrees. A small proportion of the wine (5%) is fermented in oak barrels to add a touch of complexity and texture to the wine. The finished parcels are carefully assessed, with only the finest chosen for the final blend prior to bottling.

This well balanced Chardonnay is best to drink now or will reward short term cellaring.

Normans Heritage Series Barossa Valley Shiraz 2016
Deep red with purple hues in colour. Ripe raspberries and plums with a hint of anise, white pepper and sweet vanillin oak.
A rich plum and ripe raspberry palate with complexing cinnamon and vanillin sweet dusty oak, with a soft finish and touches of acidity.
Winemaking
Selected parcels of fruit were sourced from a single vineyard in the iconic Barossa Valley for this limited edition wine. We picked the fruit in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours and aromatics that the Barossa valley is world famous for. The wine was transferred to the winery where it was hand reared with extended time on skins. The wine was crushed into open top fermenters where fermentation was initiated by wild yeasts found on the grape skins. Careful extraction and short post fermentation maceration were followed by pressing. The resultant wine was then transferred into oak where maloactic fermentation was completed before racking and maturation. The wine was aged in French oak then selected barrels were chosen for the final blend prior to bottling.

Drinking magnificently now, but will reward cellaring mid term.

Vibrant pale straw in colour. The bouquet has lifted aromas of fresh lime juice with hints of orange blossom.
The palate is fresh, bright and lively bursting with limes, green apple, citrus and mineral acidity.
Winemaking
Selected parcels of fruit were sourced from a single vineyard in the iconic Clare Valley region for this limited edition wine. The fruit was hand picked during the cool early hours of the morning. The fruit was then rapidly transported to the winery and immediately crushed, chilled and pressed, where the free run juice and pressings were separated. The juice is cold settled for 3-4 days, racked off solids and then fermented in stainless steel tanks. Post fermentation individual batches were blended to style then the finished parcels were carefully assessed, with only the finest chosen for the final blend prior to bottling.

Normans Heritage Series Coonawarra Cabernet Sauvignon 2016
Dark cherry red in colour. The nose is vintage Coonawarra Cabernet; there are splashes of fresh cherries, raspberry, chocolate and a lovely hint of tomato leaf.
The palate displays an intense fresh fruit sweetness that is balanced by a round velvety mouth feel and a full body. This 2016 Cabernet Sauvignon is vibrant and approachable, and easy drinking for all occasions.
Winemaking
Select parcels of fruit were sourced from the iconic terra rossa soils of Coonawarra for this limited edition wine. We picked the fruit at optimum ripeness in the cool of the night in order to retain the fruit's natural acidity and of course the regional flavours and aromatics that the Coonawarra is world famous for. The wine was transferred to the winery where it was hand reared with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed by the traditional techniques more often used in French winemaking. The wine was aged in French oak then selected barrels were chosen for the final blend prior to bottling.

Normans Holbrooks Road Cabernet Sauvignon 2022
Deep red purple colour. Lush and complex aromas of red berry work well with subtle notes of savoury pepper and oak. Rich opulent mouth filling palate carries flavours of red berries and some hints of varietal flavours of capsicum. Quite savoury with clean tannins and soft oak only just noticeable but providing further length to this fruit driven style of Cabernet Sauvignon.
Winemaking
The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with mature French oak.

Made to drink upon release whilst the fruit flavour is at its most fresh and vibrant but will reward cellaring over the medium term.

We crushed, chilled and fermented the juice at controlled temperatures in the cool cellar. Extended lees stirring added a degree of complexity ensuring this wine over delivers in terms of quality and overall structure despite the use of no oak. The wine was bottled after careful filtration to retain the vibrant fruit and depth of varietal flavours.

Vibrant crimson and magenta hue. Freshly cut plum and blackberry aromas, with hints of brooding dark chocolate and mint. Beautifully soft, fruit driven which is round and succulent. There is sweet plum and blackberry fruit with a full, rich texture and velvet like tannins with a hint of exotic spices.

Golden honey in colour. Bursting with sherbet lemon, passion fruit, and a hint of apple and veil of musk. Floral flavours with Turkish delight richness and strawberries & cream with a musk and apple backbone.
A Moscato full of tropical fruit flavours with great varietal character. The naturally occurring fruit acidity balances and gives a cool refreshing finish, which is crisp and clean.
Winemaking
Once the grapes reached their optimum maturity level they were harvested in the cool of the night and promptly delivered to the winery. Once fermentation was completed, the blend of juice was put together to ensure consistency across the wine. It was then filtered and bottled under screw cap to preserve the aromatic fruit.

A delicate pale green with a light blush. Lovely soft aromas of pear and rose petals. Great textural quality in the mouth with an attractive fresh range of flavours including nectarine, nashi pear and crème caramel with almost flinty mineral notes and perfectly balanced acidity.
Winemaking
Harvested at the cool of night from select vineyards located across premium cooler climate regions of South Australia. We crushed the fruit quickly to separate the clear juice from the skins. The wine went through cool fermentation then the wine was carefully filtered and bottled to retain all the appealing fruit flavours.

Made to drink upon release while the fruit flavour is at its most fresh and vibrant, but will reward short term cellaring.
